Dear Reader,

We're having a blast in the 30 in 7: Plant powered challenge.

We are on day 3, but it's not too late to jump in and catch up. Here are just some of the new plants people have been trying:

Amaranth, mango, apple, banana, kiwi, escarole, tomatoes, banana, almonds, chia seeds, broccoli asparagus carrot, onion, potato, beets, celery, cauliflower, kidney beans lettuce, kamut, yellow plum, jalepeno, avocado, oat grotes, flax seeds....and on and on.

I'm so impressed.

I've been giving participants short daily videos to help inspire them to find creative ways to get in more plants. Here's the one where I toured my local grocery store and shared some tips and tricks about buying produce.

Have it:

My husband got me an Apple watch for my birthday (which is this Sunday - don't worry you still have plenty of time to wish me a happy birthday!) I am using it as a health tracking device for sleep, heart rate and exercise information. I haven't worn any kind of watch for years so it's taking some getting used to but so far I love it. There are so many trackers out there these days. Do you use any?

Ingredient Spotlight:

Fiddleheads

Fiddleheads are the unfurled fern plant that you can forage, cook and eat very easily. They are only around from the beginning of May for a few short weeks.

They have a snappy, woody taste much like asparagus and taste great in a stir fry or just sautΓ©ed plain. Like asparagus, fiddleheads are high in antioxidants, fiber and even have some essential fatty acids.

​Try this recipe which is the most simple way to prepare and eat fiddleheads.
