Dear Reader,

When I came home from school as a kid, I was always ravenous for a snack.

"Hey Mom, what should I have for a snack?"

"Why don't you have a nice apple honey?"

Me - "🙄"

I didn't want the $%^&# apple - I wanted Doritos and Twinkies and cookies.

Can you relate? It made me so mad that was always being pawned these fruits and vegetables when I had no intention of eating them.

That mindset didn't change for many years. But now, I can proudly say that I almost always choose and want the raw cauliflower with a kick-ass dip, or an amazing honey crisp apple with almond butter or a bowlful of snap peas. I look forward to eating these things and it feels abundant, freeing and makes my body feel great, which is a reward in itself.

Because I took the rebelliousness out of it and got curious about how I could prepare vegetables and fruits in a way that I truly liked and that could be sustainable - it's become easy and its become an "intrinsic habit"

That's part of why I decided to create and run the free "30-in-7: Plant Powered Challenge".

We know WHAT we're supposed to do; we just don't always know the HOW.

Zucchini

I'm not a huge zucchini and summer squash fan but there are a few ways I enjoy them. One method involves "melting" the zucchini slowly in a sautee pan with butter or oil and then adding it to a rice and tofu dish or with some other protein and grain.

Zucchini has many health benefits, including:

Eye health: Zucchini contains beta-carotene, which the body converts into vitamin A. Vitamin A helps with cell development in the eyes and can prevent age-related conditions like macular degeneration.

Heart health: Zucchini contains manganese, vitamin C, and potassium, which may help prevent heart disease and atherosclerosis.

Diabetes: Zucchini contains magnesium and zinc, which can help break down sugar in the body. Zucchini is also high in fiber, which can help stabilize blood sugar levels.
